I'm in full swing for Christmas baking. On the menu: pretty sugar
cookies (this time I used a Katrina's kitchen recipe), cherry almond

stuffed fudge crinkles, peanut butter brownie cups for a cookie
exchange, and a completely from-scratch (and I mean completely because
I'm a little crazy) chocolate peppermint poke cake for a treat day at
school. </div>

trashed Cincinnati with freezing rain and 4" of snow. It's the best
winter storm I've seen since moving out of the Snow Belt and all the
fluffy white snow made me so happy. </div>

Christmas a only a little over 2 weeks away and I've hardly done any
shopping. To be honest, I really hate going out in the crowds, fighting

Last weekend the Buckeyes beat _ichigan. We had an impromptu party and I
whipped up cheddar sausage puffs and homemade salsa. The Buckeyes had the current longest running winning streak on college football (24 straight games!). But last
night they took on Michigan State for the Big 10 title and lost. So no National Championship game for us, but another bowl game awaits.</div>

<br />
1. So while in Cleveland, I got to go to one of my best friends baby shower!! She is the first one from that group of friends to get preggo and I'm so excited for her! I'm even more excited to meet her little guy next month when we go back to Cleveland for Christmas.<br />
<br />
2. It was a great football weekend! Not only did my home town high school team win their state quarter finals game to advance in the playoffs, but Ohio State beat Indiana. Can I get an O-H!?!<br />
<br />
3. I'm pretty excited to see November come to an end. Work-wise at least. This month I had 6 evaluation reports (5 were for new kids) and 6 IEPs which is a lot in one month for my little district. It's only going to get busier throughout the winter, but at least those are now out of the way. Now just a quick 2 day week before some time off with family for Thanksgiving.<br />
<br />
4. This past Friday we had friends over to play Tripoly. Tripoly is a card game that is a hybrid of poker, hearts, and rummy, with a little bit of gambling thrown in the mix. It seems a bit confusing, but once you get playing it's not hard at all. It's great for a group and is/was a holiday tradition for both my family and my husbands.<br />

5. So I've been hard at work for <a href="http://www.teacherspayteachers.com/Store/Erica-Haber" target="_blank">my Teachers Pay Teachers store</a> working on some new products. This week I uploaded a general Winter/Christmas activity that is completely customizable to whatever skill is being targeted. Now I'm working on some middle school resources and a few new book companions and am excited to get them posted.<br />

What's better than eating raw cookie dough? I dare you to come up with something. Because frankly, cookie dough is amazing. And these bars are no exception. Actually, they probably take cookie dough up a notch or two because it's sandwiched between two gooey layers of cookie dough flavored rice krispie treats. Ah-mazing. This recipe is from <a href="http://www.amazon.com/The-Cookie-Dough-Lovers-Cookbook/dp/1594745641" target="_blank"><i>The Cookie Dough Lovers Cookbook</i></a> and it's a must-read. I was bookmarking almost every page until I realize that was a bit ridiculous and just threw it on my Christmas list (heeeyy, Mom). But I slightly adjusted the recipe to make the krispie layer a little more gooey and adjusted the extracts to be a little more cookie-ish tasting.<br />
<br />
Oh, and please excuse the picture, it was taken on my phone at school. I brought these delicious treats in to our 11 hour long conference day when I thought the teachers would appreciate a sweet treat. They didn't last past lunch :)<br />
<br />
<u>Ingredients</u>:<br />
<i>Cookie dough:</i><br />
1/3 cup butter, room temperature<br />
1/4 cup white sugar<br />
1/2 cup packed brown sugar<br />
1 teaspoon vanilla extract<br />
1 1/4 cup all purpose flour<br />
1/4 teaspoon salt<br />
3/4 cup chocolate chips, mini preferred <br />
<br />
<br />
<i>Rice krispies</i><br />
12-14 ounces marshmallows (12 for regular, 14 for gooey-er)<br />
2 tablespoons butter<br />
1/2 teaspoon vanilla extract<br />
1/4 teaspoon almond extact<br />
1/4 teaspoon butter extract<br />
7 cups puffed rice cereal<br />

Directions:<br />
<br />
<i>Prepare the cookie dough:</i><br />
1. Cream the butter and the sugar in the bowl of a stand mixer until light and fluffy. Add milk, vanilla, and salt, and mix until incorporated. On low speed, add flour until thoroughly mixed in. Stir in chocolate chips.<br />
<br />
2. Line a 13x9 inch baking pan with foil and lightly grease it. Pat the cookie dough (it will be pretty sticky) into a smooth layer in the pan and refrigerate - at least until the krispie layer is done but overnight if you're making it ahead of time. (Note: after I smooshed it down a little in the pan, I removed the foil and cookie dough from the pan, covered it with wax paper, and rolled it flat with a rolling pin to help it spread out better, then I put it back in the pan and smooshed the edges in).<br />
<br />
<i>Prepare the rice krispie layers:</i><br />
3. Melt the butter and marshmallows over medium low heat stirring constantly until smooth. Add in the extracts (you can do all vanilla if you don't want to use or don't have the almond and butter extracts). Gently fold in the rice cereal and stir to evenly coat.<br />

4. Remove the foil/cookie dough from the pan and lightly grease the pan. Spread half the rice krispie layer on the bottom of the pan (grease your hands and work quickly but carefully since it will be hot, too). Flip the layer of cookie dough onto the krispies, then top with the remainder of the rice krispies.<br />
<br />
5. Let cool and set for about a half hour (if you can really wait that long), and cut into desired sizes (I got 24 bars from mine).<br />
<br />
Refrigerate if not serving immediately. Last week I was sick and pretty lame and didn't do any baking or anything fun besides sleep and catch up on shows on Netflix. 1. Despite not baking a whole lot, I did try to make carmelita cups - an oat-based dough pressed into a mini muffin pan and filled with a Rolo. It turned out ok, but totally not worth it's own blog post yet. My hubby did love them though, so that's a bonus. Once I do some refining and am happy with them I'll definitely post about them.<br />
<br />
2. We ordered new furniture around Labor Day and it finally arrived yesterday. I feel like such a grown up with brand new matching furniture. Such a step up from the handed down couch and mismatched recliners we had. Now on to decorating!<br />
<br />
3. I got a new cookbook from the library and it quickly made its way onto my Christmas list. <a href="http://www.amazon.com/The-Cookie-Dough-Lovers-Cookbook/dp/1594745641" target="_blank">The Cookie Dough Lovers Cookbook</a>. Every recipe contains eggless cookie dough so it's safe to consume. And not just chocolate chip cookie dough, but sugar cookie dough, peanut butter, gingerbread, and chocolate! Sugar cookies topped with cookie dough frosting? YES! Chocolate chip cookie dough rice krispy treats? YES! And so much more. Totally worth checking out.<br />

4. We celebrated Halloween last weekend at a party at our friends house Saturday night. I dressed up as a Sim (like from the video game) which was super easy: I made an origami plumbob and fixed it to a headband and wore it with my regular clothes. All about warm and cheap.<br />

5. High school football season is officially over for my school - we weren't that great and didn't make it into playoffs. Now I can start focusing on planning prom and spring season for Girls on the Run!<br />

The chocolate cookies are rich, fudgy, and chewy. They're speckled with chocolate chips and I bet would be even more incredible with the addition of roughly chopped cookies. The dough gets rolled in chocolate cookie crumbs (I used generic Oreos) which give the outside a crunchy and slightly crumbly texture. I imagine this would be good with just about any crumbled hard cookie (like thin mints, vanilla wafers, etc). </div>

1. I'm almost finished with Weeds on Netflix...the show went crazy for a few seasons in the middle but I'm liking where it's ending up. Any suggestions on new series to start?<br />

2. Ohio State defeated Penn State and did an<a href="http://www.youtube.com/watch?v=7_ToAF46GPQ" target="_blank"> amazing half time show you have to watch</a>. It's Movie Classics and features Superman holding up a building, a dinosaur from Jurassic Park eating someone, and other really awesome things. Seriously, go check it out.<br />
<br />
3. I've made bread for the third time in three weeks and I'm really loving it! It fills the whole house with that warm, bready smell. The bread itself tastes so much better than store bought. And it's cheaper than buying it. I'll definitely dedicate a post to it sometime soon.<br />
<br />
4. On Friday, we had friends over our house carve pumpkins and I scored on pumpkin seeds - 13 cups! A big thanks to my friend Mollie for helping me sort through all the pumpkin goo to get all those tasty seeds, I'll definitely give you a container full for your effort.<br />
<br />
5. The husband and I did a late celebration of our anniversary (three years already!) on Saturday and saw Swan Lake at the Aronoff. The performance was amazing....every time I see a ballet I wish I could dance on pointe, so pretty! But then I remember that I can't find a beat and don't have enough coordination, lol.<br />

2. I made <a href="http://allrecipes.com/recipe/amish-white-bread/" target="_blank">white bread</a> again this weekend - this time I made a regular loaf of bread and I made one pepperoni roll. I decreased the amount of sugar called for in the recipe from 2/3 cup to 1/4 cup and definitely like the flavor better. The higher amount of sugar would be great for making sweet rolls or cinnamon bread.<br />

3. The Ohio State Buckeyes were victorious over Iowa. Although the defense wasn't that great and we didn't really show up to play until the second half, it was still a good game. Next week, bring on Penn State!<br />

4. My friend Courtney sells amazing resources for elementary and intervention in <a href="http://www.teacherspayteachers.com/Store/Courtney-Keimer" target="_blank">her Teachers Pay Teachers</a> store and she has really inspired me to start selling some of my own materials as well. So far, I've made a few games for articulation - specifically two vocalic /r/ games and one game for /s/ blend sounds ("st"). Aka: Zax Sauce. There's this chicken finger place right off Ohio State's campus right on High Street called Raising Cane's. This place only sells chicken fingers. Of course you get side items, like slaw, texas toast, and fries, but chicken fingers is it. They are so good, and they are served with this incredible sauce, "Cane's Sauce." It's so good you dip everything into it: chicken, bread, fries, everything. You can even buy a whole cup of it to take home (and dip with pizza, hot ham and cheese sandwiches, phillies, wings, etc). The husband is so excited we found a recipe for this beloved sauce.<br />

I was asked to bring cupcakes to his party and the guidance I got was that he likes chocolate and strawberries, and his favorite colors are pink and blue. The kicker is that his little brother can't have corn products, like corn syrup or corn starch or veggie oil (if it's blended with corn oil).<br />

My mind started spinning as to what I could make. I decided on my <a href="http://sweetyourheartout.blogspot.com/2013/08/cupcake-party.html" target="_blank">favorite chocolate cupcakes</a> and a strawberry frosting with blue sprinkles. The cupcakes are so rich and chocolatey and are perfectly complimented by the fresh and sweet strawberry frosting. I was worried that the strawberry frosting would taste artificial because it largely gets its flavor from a packet of strawberry jello but the addition of fresh berries really brighten it up!<br />

8 medium sized strawberries, mashed (I used a potato masher) <br />
3-6 tablespoons powdered sugar (make sure it's Kosher for Passover which contains potato starch, or make your own by following <a href="http://www.marthastewart.com/332428/passover-powdered-sugar" target="_blank">Martha Stewarts Recipe</a>, or just blend a few tablespoons of sugar until powdery and use immediately - the potato starch acts an an anti-clumping agent)<br />

<u>Directions</u>:<br />

1. In the bowl of a stand mixer, beat heavy cream until stiff peaks using the whisk attachment (but don't over beat or it will start to separate and turn into butter and whey). Stir in vanilla extract and strawberry jello. Transfer to a medium bowl.<br />

2. In the bowl of the stand mixer, beat cream cheese until smooth. Slowly add whipped cream one heaping spoonful at a time, mixing slowly until all the cream is incorporated. Add the mashed strawberries.<br />

3. Add powdered sugar one tablespoon at a time until the desired sweetness and consistency is reached.<br />

So some exciting changes have been happening over the last month. Namely, we bought a house!...and moved into it. The space is so much bigger than the duplex we were renting and I can't wait to put my decorating expertise (ha!) into it. One of my favorite things about the new house is that the kitchen has a double oven. A DOUBLE. OVEN! I die.<br />

So we had a small group of people over our first week in (talk about motivation to get unpacked) and I baked cupcakes for the occasion. More specifically, my friend Amy and I each made a batch of cupcakes (she made <a href="http://www.cupcakeproject.com/2011/09/ultimate-vanilla-cupcake-test-baked-by.htmlvk4JsQ&bvm=bv.50500085,d.aWc" target="_blank">vanilla</a>) then consolidated all of our old buttercream - but not old in a bad way, old in the sense that we made buttercreams for other cakes and cupcakes and froze the leftovers, because there are always leftovers - and frosted our hearts out.<br />

I made chocolate cupcakes (recipe shared below) from Cupcake Project. They were awesome. The recipe was tested by 50 bakers as Stef from the Cupcake Project churned out recipe after recipe in search of the ultimate chocolate cupcake. The winning recipe has a batter that tastes like pudding and results in a dense, rich chocolate cake. The recipe allows for variations among chocolate, depending on your preference or what you have in your pantry. I used Schogetten Dark Chocolate bars and Bakers Corner Unsweetened Cocoa Powder (the same chocolates I use in<a href="http://sweetyourheartout.blogspot.com/2012/06/the-best-brownie-i-ever-made.html" target="_blank"> my favorite brownies</a>; both from Aldi's). I also added a heaping teaspoon of Medaglia D'Oro instant espresso powder to my dry ingredients. I can't decide which chocolate cupcake I like better, <a href="http://sweetyourheartout.blogspot.com/2013/02/one-bowl-chocolate-cake-with-dreamy.html" target="_blank">this one that I usually pair with peanut butter cream cheese frosting</a>, or the new Cupcake Project one. I'll have to do a side-by-side comparison ;)<br />

<u>Ingredients</u><br />
2 ounces of your favorite chocolate (nothing with add ins like nuts, not white chocolate, not candy melts)<br />
1 cup all purpose flour<br />
1/2 teaspoon salt<br />
1/2 teaspoon baking soda<br />
1/2 cup cocoa powder<br />
1 heaping teaspoon instant espresso or instant coffee granules (*optional)<br />
1/4 cup (half a stick) unsalted butter, softened at room temperature<br />
1 cup white sugar<br />
2 large eggs, room temperature<br />
2 large egg yolks, room temperature<br />
2 teaspoons vanilla extract<br />
1/2 cup plus 1 tablespoon vegetable oil<br />
1/2 cup warm water (not boiling)<br />
1/3 cup sour cream<br />

<u>Directions</u><br />
<br />
Preaheat oven to 350 degrees. <br />
<br />
1. In a microwave safe bowl, microwave 2 ounces of chocolate until melted (30 seconds at 50% power, stir, and repeat until smooth). Alternatively, you could melt the chocolate over a double boiler. Set aside to cool (but not harden).<br />
<br />
2. In a large bowl, whisk together the flour, salt, baking soda, cocoa powder, and instant espresso. Set aside.<br />
<br />
3. In a glass measuring cup, combine vegetable oil and water. Set aside.<br />
<br />
4. In the bowl of a stand mixer, cream together the butter and sugar. It will look like wet sand. Mix in melted and cooled chocolate. Add eggs one at a time, followed by egg yolks one at a time, mixing thoroughly between each addition. Add vanilla extract and mix.<br />
<br />
5. Add 1/3 of the flour mixture to the stand mixer. Mix until flour seems mostly incorporated, with only maybe a few streaks of flour showing. Add the oil/water mixture. Mix to combine. Add 1/3 of flour mixture, mix until incorporated. Add sour cream, mix. Add remaining flour, mix until well incorporated.<br />
<br />
6. Line 18 cupcake wells with paper liner. Fill each 2/3 of the way full with batter (this was just over 2 heaping tablespoons per cupcake). Bake for 16 minutes, and check for done-ness but inserting a toothpick into a cupcake and checking if it comes out with a few moist crumbs. If it seems too wet, bake for another 2 minutes and check. Repeat until a toothpick inserted comes out with just a few moist crumbs.<br />

7. Immediately transfer to wire rack to cool completely before frosting.<br />

This dip uses cream cheese, so it retains a bit of tanginess. I attempted (mostly successfully) to offset that with extra cocoa powder but I think the addition of some boxed brownie mix would make the flavor even better.</div>

This treat took a decent amount of time to make - it has two rises plus baking, so it's not something to throw together in a pinch. But, the result is well worth it. The sweet pumpkin and cinnamon squares pull apart to reveal the soft tufts of flavorful bread. It's topped with a maple glaze that really makes this taste like Fall. Best served warm, makes a great breakfast, snack, or dessert.</div>

I have a new frosting recipe I wanted to get out to you before today, but I got a little distracted. I'm sure you'll forgive me when I post it in the next day or two, right? 1. My cousin who lives in Texas had a baby and was in Ohio visiting. I had an awesome afternoon hanging out with her and my other cousins and meeting her new little guy. He is so cute and looks just like our grandpa, but with Asian eyes. She is the first of the cousins to have a kid and she seems to have gotten pretty lucky with her awesome baby.<br />

2. My husbands rugby team had their 10th annual breast cancer fundraiser and it was a huge success! The event is held at a bar, they have bottomless beers, a split-the-pot raffle, baskets for raffle, food, and a bake sale. I donated <a href="http://sweetyourheartout.blogspot.com/2012/09/beer-marshmallows.html" target="_blank">beer marshmallows</a> and they were amazing! For this batch, I used Guinness and drizzled chocolate over the marshmallows instead of dipping them.<br />

3. I made bread this week! I usually stray away from yeast breads, but this one got great reviews and seemed fairly easy. <a href="http://allrecipes.com/recipe/amish-white-bread/" target="_blank">This </a>is the recipe I used. Next time I make it (and I definitely will) I will use less sugar per some comments. Per another reviewer's suggestion, I found it really helpful to turn on my oven for 20-30 seconds, then turn it off, and use it to help my dough rise. I used my homemade white dough to make two loaves of pepperoni bread that I can grab for quick lunches or pair with soups for dinners.<br />
<br />
4. My mom and I split an order of Ugandan vanilla beans from Beanilla and I'm so excited to to say that they arrived in the mail! I can't wait to drop these fragrant beans into a bottle of vodka and get a new batch of <a href="http://sweetyourheartout.blogspot.com/2012/05/homemade-vanilla-extract.html" target="_blank">vanilla extract</a> started!<br />

5. Ohio State football had a by-week but next week the Buckeyes will take on Iowa...bring it on! My high school played and lost to a pretty good private school in Cincinnati. Bummer we lost but I was so impressed with the other schools facilities - their sports complex was really nice, they had a latte cart with their concessions (really, who has a latte cart), and when their team entered the field they had purple smoke!..crazy! <br />

1. What an amazing football weekend! My school had their homecoming and actually won. We almost botched it in the 4th, but an amazing interception kept us in the lead. I made really cute <a href="http://www.lilaloa.com/2012/04/vanilla-variation.html" target="_blank">sugar cookies</a> for the cheerleaders and they loved them. When I made these, I used all vanilla extract instead of orange and/or almond extract - and I definitely loved the vanilla flavor they had. Next time I make a batch, I think I will reduce or omit the baking powder, because my cookies rose and spread <i>just a little bit</i>.<br />
<br />
2. Speaking of football, OSU had an amazing game against Northwestern. What an exciting game - I love when my Buckeyes can pull off a win and keep the game interesting!<br />
<br />
3. I'm so excited it's October and all the great things that can be baked with pumpkin. <a href="http://sweetyourheartout.blogspot.com/2012_10_01_archive.html" target="_blank">Seeds, breads</a>, muffins, pancakes, the list is endless. What are your favorite pumpkin recipes?<br />

4. We had an awesome Saturday hanging out at our friends farm! Another couple was there and brought a bow and arrow, so we spent a good bit of time shooting arrows at some stacked hay bales with a spray painted target on it. Turns out, I'm not too accurate with a bow and arrow, so in case of zombie apocalypse, I'm gonna need a better weapon of choice. Still, lots of fun hanging out :)<br />

5. Next weekend is my husband's rugby team's breast cancer fundraiser. It's a cause that is near and dear to the team, as one of the woman players passed away from the disease. My friend Amy and I are baking some amazing treats to sell as bake sale items. I'm making<a href="http://sweetyourheartout.blogspot.com/2012/09/beer-marshmallows.html" target="_blank"> beer marshmallows</a> and some sort of cupcake. For the cupcake, I'm stuck in a three way tie: <a href="http://sweetyourheartout.blogspot.com/2013/08/cupcake-party.html" target="_blank">chocolate cupcakes</a> with a <a href="http://sweetyourheartout.blogspot.com/2013/03/cookies-and-cream-frosting.html" target="_blank">cookies and cream frosting</a> (pretty standard), brown sugar cupcakes with maple buttercream and candied bacon, or salted popcorn cupcakes (complete with popcorn flour and popcorn scented milk) with salted caramel buttercream and caramel corn topping. I can't even put into words how incredible these brownies are. It's all the sweetness and textures and flavors of a Snickers candy bar sitting on top of a brownie. For me, these are even better than regular ol' Snickers bars....I mean, the brownie is like the perfect vessel to deliver the nougat, peanuts, and caramel to your mouth.<br />

I admit, I cheated a little bit....I used a boxed brownie mix to speed things up. But really, go ahead and make <a href="http://sweetyourheartout.blogspot.com/2012/06/the-best-brownie-i-ever-made.html" target="_blank">home made brownies</a>. Usually I do, but with all the other home made components and honestly feeling lazy, the boxed mix worked out just fine. Just make sure to use the large family-sized box that will make a 13x9 inch pan; likewise, if you make your own favorite brownie recipe.<br />

<u>Ingredients</u><br />
<i>Brownies</i> <br />
1 box of brownies, family-sized, baked according to package directions in a foil-lined pans<br />
<br />
<i>Nougat</i><br />
1/4 cup butter, unsalted<br />
1 cup white sugar<br />
1/4 cup evaporated milk (you can DIY your own by mixing 2 1/2 tablespoons of dry nonfat milk powder with 3 tablespoons water)<br />
1 1/2 cups marshmallow fluff<br />
1/4 cup peanut butter<br />
1 teaspoon vanilla extract<br />
<br />
<i>Caramel-Peanut Layer</i><br />
14 ounces Kraft caramels<br />
1/4 cup heavy whipping cream<br />
1 1/2 cup salted peanuts chopped, roughly chopped<br />
<br />
<i>Topping</i> <br />
About 1/4 - 1/2 cup semisweet chocolate chips for drizzling.<br />
<br />
<br />
<u>Directions</u><br />
<br />
1. Prepare a 9x13 inch pan of brownies baked in a foil lined baking pan. Set aside to cool completely.<br />
<br />
2. <i>Prepare the nougat</i>. In a medium saucepan over medium heat, melt butter. Add evaporated milk and sugar and stir until dissolved. Bring to a boil and let cook for 5 minutes, stirring occasionally. Stir in peanut butter, marshmallow fluff, and vanilla, and stir until smooth. Pour over brownies, smooth with an offset spatula, and set aside to cool.<br />
<br />
3. <i>Prepare the caramel-peanut layer</i>. In a small saucepan over medium-low heat combine the unwrapped caramels and heavy cream. Stir occasionally until smooth. Once smooth, stir in peanuts. Once the nougat layer is cool (or mostly cool), pour the hot caramel over the nougat. Spread evenly with an offset spatuala and set aside to cool.<br />
<br />
4. Melt the chocolate over a double boiler or in a microwave (at 30 second increments at 50% power, stirring between rounds, until melted and smooth). Put chocolate in a small zip top bag, snip a small hole in the corner, and drizzle over caramel layer. <br />
<br />
5. Refrigerate for a few hours or over night so that everything can mingle together. Before cutting, let sit at room temperature for 30 minutes. Cut with a hot knife (I ran a metal knife under hot running water, quickly dried with a paper towel), cleaning knife between cuts as needed.<br />
<br />
Eat and be amazed at a new and improved Snickers bar. <br />

It's still September, but in my classroom I've already changed my calendar over to October. And I'm already thinking about what I want to dress up as for Halloween. Being warm is a must for any costume for me....Halloween in Ohio can be anywhere between upper 50's and perfect fall weather to 30's with sleet and rain. I found a picture on Pinterest of a girl with "Grumpy Cat" make up which would be an awesome, funny, and warm costume. I love getting dressed up and carving pumpkins...let the countdown to Halloween begin!<br />

2. This was an awesome football weekend for me....my school won their high school football game (our first - and probably only - all season), our cheerleaders brought their A game, and Ohio State defeated Wisconsin in an entertaining game of football.<br />
<br />
3. I just place an order for Ugandan vanilla beans from <a href="http://www.beanilla.com/" target="_blank">Beanilla</a> and I'm really excited to get a new batch a vanilla extract started. Ugandan beans have an aroma of earthy notes and tones of milk chocolate. I usually make <a href="http://sweetyourheartout.blogspot.com/2012/05/homemade-vanilla-extract.html" target="_blank">vanilla extract</a> with Madagascar bourbon beans that I get off of Amazon and recently just finished a batch with Tahitian beans. The Tahitian beans have a chocolate cherry aroma with a fragrance that is to die for. Needless to say, I need to start experimenting with recipes to determine which bean to use in what. Stay tuned for some soft and chewy vanilla sugar cookies with vanilla icing.<br />
<br />
4.Cleveland Indians scored a wild card spot in the playoffs. It's their first wild card spot in the history of the team and our first playoff appearance since 2007. Not a bad year to be a tribe fan, I'd say. However, since living in Cincinnati, I've started to root for the Reds, too, but given the option I always root for Cleveland. What can I say...I'm a Cleveland girl at heart :)<br />

5. Our church had their annual Oktoberfest this weekend and my husband and I volunteered all evening. He manned the grill cooking up tasty brats and mets while I fried up 100 pounds of homemade potato pancakes on the flat top. I managed to sneak away from my post to snag some spaetzles for dinner and an apple turnover for dessert. It was a superfun and low-key way to spend the evening.<br />

A few weeks ago my friend at school, Courtney, celebrated her birthday. A
birthday that started a new decade, so kinda a big deal, right? And

Also, the white cake utilizes a box mix. Say what?!? I know. I'm not
normally that kind of gal. But the reviews for this recipe were
outstanding, and even though you are using a box mix, you're not
actually making a box cake. So much more goes into it that I think we
can let the semi-home made part slide, right? Right. But if you really
want to do it all yourself, try <a href="http://chickensintheroad.com/cooking/homemade-white-cake-mix/" target="_blank">this recipe for a white cake mix</a> from
Chickens in the Road. I haven't tried it this way, but probably just
make sure you have 18.25 ounces of mix when your done.<br />

And most importantly, I think the secret for the awesome cupcakes is
sour cream. They both have it. Full fat is probably the way to go, but I
already had reduced fat sour cream in the fridge and I think it worked
out just fine. And, IMHO, it never hurts to save on some calories as
long as flavor isn't sacrificed.<br />
<br />
Reminder: one batch of filling and frosting will be enough for 1 batch (around 18 cupcakes) of either (not both) recipes.<br />
<br />

First, make the filling. It needs to set up over night, so do it at least 1 day ahead of time.<br />
<br />
<br />
<b>Raspberry Filling</b><br />
<br />
<u>Ingredients</u><br />
2 cups frozen raspberries, thawed (with 1/4 cup sugar if they are not already sweetened)<br />
1/3 cup sugar<br />
1-1/4 cups water/liquid*<br />
3-4 tablespoons of corn starch (if you plan on blending the berries up, I suggest leaning towards 3 1/2 to 4 tablespoons)<br />
1 teaspoon lemon juice<br />
<br />
<u>Directions</u><br />
1. After berries are thawed, *measure out the berry juice into a measuring cup. Add water up to the 1 1/4 cup line.<br />
<br />
2. In a medium sauce pan, whisk together the sugar and corn starch. Stir
in liquid and the lemon juice and heat over medium high heat until the
mixture thickens, stirring constantly. Immediately remove from heat.<br />
<br />
3. Add berries to the thickened sauce and stir together well to combine. You can stop here and use this to fill your cupcakes...<br />
<br />
4. ...or you can purée the mixture in a blender, food processor, or
using an immersion blender (my blade of choice) and strain the mixture
through a small to medium mesh sieve to help remove some of the seeds
(straining will greatly reduce the number of seeds but some will still
sneak in).<br />
<br />
5. Store in an air tight container in the fridge at least overnight. The purée will thicken even more as it cools.<br />
<br />
<i>Note</i>: the first time I made this filling, I used 3 tablespoons of corn
starch but felt that it didn't set up enough to fill cupcakes. This
maybe had to do with using the immersion blender, which I think may have
broken up some of the thickening bonds from the pectin in the fruit.
The second time I made it, I used 4 tablespoons of corn starch and
blended only until just puréed and I liked the consistency a lot better.<br />
<br />
Next, make the cupcakes. Below, I'm sharing the white cake recipe I used
for Courtney's cupcakes. You can find the chocolate recipe I used <a href="http://sweetyourheartout.blogspot.com/2013/08/cupcake-party.html" target="_blank">here</a>.<br />
<br />
<br />
<b>White Cupcakes</b> (yields around 24-36...I got 26)<br />
<br />
<u>Ingredients</u><br />
1 box white cake mix (16.25-18.25 ounces, depending on what your store
carries. The original recipe calls for 18.25oz but I could only find
16.25oz so it's what I used and it turned out fine)<br />
1 cup flour<br />
1 cup white sugar<br />
3/4 teaspoon salt<br />
1 1/3 cups water<br />
2 tablespoons vegetable oil<br />
1 teaspoon vanilla extract<br />
1 cup sour cream<br />
4 large egg whites<br />
<br />
<u>Directions</u><br />
<br />
1. Preheat oven to 325 degrees. Line cupcake pan with liners. You'll need between 24-36 liners.<br />
<br />
2. In a large bowl or the bowl of a stand mixer, whisk to combine the cake mix, flour, sugar, and salt.<br />
<br />
3. Add the remaining ingredients (water, oil, vanilla, sour cream, and
egg whites). Start mixing on low until all the dry ingredients are wet,
then increase speed to medium and mix for about 2 minutes - until
everything is well combined.<br />
<br />
4. Fill cupcake liners to about 2/3 full ( for me this was 26 cupcakes)
and bake for 15 minutes (rotating after 10 if you need to). Check for
done-ness with a toothpick - it should come out clean or only with a few
moist crumbs stuck to it. Bake at 1 minute increments until done if
needed.<br />
<br />
5. Let cool for a minute or two in the pan, then immediately transfer to a baking rack to cool.<br />
<br />
6. Once cool, fill the cupcakes (reserve 1/4 to 1/2 cup filling for the
frosting). Core each cupcake, saving the tops. Add about 2 teaspoons of
filling to each cake (don't fill to the very top, but close to it).
Slice off the bottoms of the saved tops, and re-top the cupcakes.
Either eat the cupcake middles or toss them out or turn them into cake
balls with any extra frosting.<br />
<br />
Finally make the frosting and frost the cupcakes.<br />
<br />
<b>Raspberry Cream Cheese Frosting</b><br />
<b><br /></b>
<u>Ingredients</u><br />
<br />
Cream cheese, 8 ounces, at room temperature<br />
1 stick of unsalted butter, room temperature, cut into tablespoons<br />
1/4 to 1/2 cup raspberry filling from the above recipe<br />
1 teaspoon vanilla extract<br />
2 cups powdered sugar, more or less<br />
<br />
<u>Directions</u><br />
<br />
1. In the bowl of a stand mixer, cream the block of cream cheese. Add
butter 1 tablespoon at a time until they are completely creamed
together.<br />
<br />
2. Add 1/4 cup of raspberry filling, cream to combine. Add vanilla extract and mix.<br />
<br />
3. Add one cup of powdered sugar, mix to combine. Add second cup of powdered sugar and mix to combine.<br />
<br />
4. Give it a taste test, add more raspberry purée to taste. Add more
powdered sugar for a thicker consistency. Thin the frosting with milk (1
tablespoon at a time) if you want a thinner texture.<br />
<br />
5. Mix in high until light and fluffy.<br />
<br />
Pipe frosting onto cupcakes. You can make pretty swirls using the Wilton
1M tip or dainty ruffles using the 104 tip. Then sink your teeth into
the most delectable cupcakes your taste buds have ever encountered.<br />

1. I've mentioned before that I do some weight lifting at a <a href="http://www.academysportsperformance.com/" target="_blank">gym my friend owns</a>. He is an amazing trainer and has been working with me to build strength and I must say that it is working - this past week, I dead lifted 175 pounds! I know it's no world record, but I'm pretty proud of myself.<br />

2. I'm happy to have discovered Wonder Years on Netflix. Needless to say, that's been eating up a decent amount of time! It's kinda like the pre- Boy Meets World for me. Speaking of Boy Meets World, who else is excited for Girl Meets World?<br />

3. Buckeyes demolished Florida A&M this weekend, 76-0. Not a great game to watch, but I'll take the win. I'm excited for next weekends game against Wisconsin, which should actually prove to be a game worth watching. This past Saturday, the marching band did an awesome Beatles Tribute - you can check it out <a href="http://www.youtube.com/watch?v=hUUqah9bUM0" target="_blank">here</a>.<br />

4. I made double cookie dough ice cream this weekend. Flavor-wise, it's excellent, but the texture was not as creamy as I was hoping for. I used cream and whole milk, so I'm not really sure where I went wrong. Either way, I have 4 pints of it in my freezer which I'll definitely eat. <br />

5. Grey's Anatomy starts this Thursday with a two hour season premiere! Who else is excited about this?<br />

Zest from 3-4 lemons (about 2 tablespoon)<br />
4 eggs plus 2 egg yolk<br />
2/3 cup lemon juice (from 6 small lemons)<br />
1 can sweetened condensed milk<br />
1/2 teaspoon vanilla extract<br />
<br />
<i>Italian Meringue</i> <br />
3 large egg whites, room temperature<br />
1 cup sugar<br />
2 tablespoons corn syrup<br />
1/4 cup water<br />
1/8 teaspoon kosher salt<br />
<br />
<u>Directions</u><br />
<br />
<i>Lemon layer </i><br />
1. Zest the lemon into a small bowl. Whisk the eggs together with the zest. <br />
<br />
2. Heat the lemon juice in a small nonreactive saucepan until simmering but not boiling. While whisking continuously, slowly add the lemon juice to the eggs in a slow but steady stream.<br />
<br />
3. Add the mixture back to the saucepan and heat over medium low until the mixture registered 160 degrees on a digital or candy thermometer, about 3 minutes. The spatula should leave a small trail across the bottom of the pan that fills in on itself a little quickly, but not too fast. <br />
<br />
4. Immediately remove from heat, stir in sweetened condensed milk, vanilla, and a pinch salt. <br />
<br />
5. Strain the mixture through a very fine wire mesh sieve. Place into your serving dish of choice (I used a small 7"x11" glass pyrex). Set aside.<br />
<br />
<i>Italian Meringue</i><br />
<br />
6. Place the egg whites in the bowl of a stand mixer. Beat with the whisk attachment until soft peaks form. Beat in salt. While this is going, start the sugar syrup. Don't let the eggs over mix, or the eggs will start to separate and become grainy. If you notice soft peaks before your sugar syrup is ready, reduce speed to low, but keep stirring.<br />
<br />
7. In a small saucepan, combine the sugar, corn syrup, and 1/4 cup of water. Heat over medium-low until the sugar dissolves. Increase heat to medium-high and boil without stirring until a candy thermometer reads 238 degrees.<br />
<br />
8. With the mixer running on medium, slowly pour the syrup down the bowl of the stand mixer and beat until the meringue yields stiff peaks and is glossy. Continue beating on low until cool.<br />
<br />
9. Layer the meringue over the lemon layer. You can spread it evenly with an offset spatula then make swirls, or you can pipe with a piping bag and a star attachment for a more decorative look.<br />
<br />
10. Right before serving, preheat oven to 450 degrees. Toast meringue for 4-5 minutes until the top is lightly golden. You could also broil for a few minutes or use a kitchen torch. <br />
<br />
I served this with home made pie crust dippers. I followed Smitten Kitchen's <a href="http://smittenkitchen.com/blog/2008/11/pie-crust-102-all-butter-really-flaky-pie-dough/" target="_blank">All Butter, Really Flaky Pie Dough</a> recipe. After I rolled out the dough I melted a tablespoon of butter and brushed it over the dough and sprinkled with sugar. Then, I used a pastry cutter to make triangles, but you could use cookie cutters to make cute shapes, too. I lined a baking sheet with parchment paper and baked at 375 degrees for 17 minutes, until the edges started to slightly brown. Cooled on a baking rack and dipped and these were extraordinary!<br />

1. You may have noticed a new design for my blog - I'm playing around with colors and design things and am not sure if I'm straight up loving the new look. I felt I was definitely in need for a change, but haven't fully decided if this is it. Stay tuned for future updates :)<br />

2. Fall weather came in full force this weekend. We celebrated a wedding and a friends birthday this weekend and I'm happy for a lazy Sunday cozied up in my <a href="http://www.bella.com/sweats.html?deptid=5&deptid=5" target="_blank">favorite sweats</a>, a blanket my grandma knitted me, and a marathon of Breaking Bad. I'm sure here in Ohio well have a few more hot days, but its officially football and campfire season in my book. <br />

3. Buckeyes beat Cal Berkley last night, 52-34. And Michigan <i>almost </i>lost to U. Akron. Perfect football Saturday if you ask me. <br />
<br />
4. Even though the weather has turned chilly, I still really want to break out my ice cream maker for a new batch of ice cream...I'm thinking cookie dough flavored ice cream with cookie dough bits. <br />
<br />
5. Has anyone heard of <a href="https://stitchfix.com/" target="_blank">Stitch Fix</a>? It's an online service where you fill out your style profile and for $20 a stylist sends you 5 items to try. If you choose to buy something, your $20 styling fee is applied to the total purchase. Anything you don't want can be sent back in a prepaid envelope. If you've tried it, do you like it? I'm thinking of giving it a shot. <br />

So after my mom came and spent four days helping me unpack my kitchen, she left behind her extra ice cream attachment for the kitchen aid. Woot woot. I can't tell you how excited I was to make ice cream with it. I've made two ingredient ice cream before and it's turned out excellent but it's not quite the same as churned ice cream.<br />

The ice cream I made is based on a recipe by Jeni's Splendid Ice Cream. If you're from Ohio you've probably heard of Jeni's. If you've ever visited Columbus where Jeni's is based, you've probably visited the shop. If your fortunate enough to call yourself a Buckeye, you've probably eaten at Jeni's more than you care to admit, but that's okay. Jeni's makes gourmet ice cream; flavors as basic (but in no way ordinary) as chocolate or vanilla, to as gourmet as sweet corn and raspberry, tres leches, and chamomile Chardonnay, just to name a few. So a Jeni's recipe was an obvious way to start out my ice cream making expedition. I took some cues from the Ben and Jerry's cook book and concocted this amazing dessert. <br />
<br />
The ice cream most definitely tastes of like coffee, fresh brewed and full of flavor. The Heath bar changes from its crunchy texture into something glorious and chewy and soft. It's not a change that happens overnight though, and I honestly finished all of my ice cream before that happened. The reason it will (eventually) change in texture is because Heath bars are hygroscopic - meaning that it takes up moisture and retains it, which changes the original texture.<br />
<br />
<b>The recipe</b><br />
Yields a little more than 1 quart. <br />
<br />
<u>Ingredients</u><br />
4 1/2 ounces Heath bar, chopped into 1/2"-1" pieces (I bought minis and chopped them in half)<br />
2 cups whole milk, divided<br />
2 tablespoons corn starch<br />
3 tablespoons (1 1/2 ounces) cream cheese, softened at room temperature<br />
1/8 teaspoon fine sea salt<br />
2 cups heavy whipping cream<br />
3/4 cup white sugar<br />
3 tablespoons light corn syrup<br />
1 teaspoon instant espresso powder<br />
1/4 cup of freshly ground course dark roast coffee beans (I milled a small bag of beans right at the grocery store in the coffee aisle and used them same day)<br />
<br />
<u>Directions</u><br />
<br />
1. Freeze your ice cream maker according to manufacturers instructions. For my Kitchen Aid ice cream maker, I froze the canister overnight. <br />
<br />
2. Chop the Heath bar, put in a small bowl, and place in freezer. In a small bowl, whisk together 2 tablespoons milk with the corn starch. Set aside. In a large bowl, whisk together the softened cream cheese and the salt, set aside. In a large bowl, make an ice bath and set aside. <br />
<br />
3. In a large sauce pan, whisk together to combine the remaining milk, cream, sugar, corn syrup, and instant espresso powder. Bring to a rolling boil, and let boil for 4 minutes. Remove from heat, stir in coffee grounds, and let steep for 5 minutes. <br />
<br />
4. Strain the coffee from the cream by lining a wire mesh sieve with two layers of cheese cloth. Squeeze cheese cloth to extract as much cream as possible, discard grounds. Rinse out the pot so that there are no grounds left and return the cream to the saucepan. <br />
<br />
5. Place the saucepan on medium high heat and whisk in the corn starch slurry. Bring to a boil and allow to boil for 1 minute - the mixture should be thickened. Then whisk the hot cream over the cream cheese. <br />
<br />
6. Transfer cream to a gallon sized ziplock bag, seal, and place in the ice bath to cool, about 30 minutes. Add more ice as necessary. When the mixture is cold, assemble the ice cream maker and attach to the kitchenaid. Turn the mixer onto stir, and slowly add the cream mixture to the bowl. Let stir and churn for about 20 minutes during which time the ice cream will begin to thicken and look like soft soft-serve. Add the Heath pieces and mix for another 5-10 minutes. <br />
<br />
7. Transfer the ice cream to an air tight container, press parchment or plastic wrap over the surface, and freeze for several hours or overnight. <br />
<br />
After all the effort I put into making the ice cream, I began to wonder if I even saved any money doing it myself. I mean, I love that there are no weird ingredients in it with improuncable names, but I also like convenience. A quick breakdown indicated that this <i>batch </i>of ice cream (around 2 pints) cost about $6ish to make, which is way cheaper than a pint of Jeni's from the store ($9/pint). Hooray for savings and for delicious ice cream!<br />

Here's whats been on my mind this past week! <br />
<br />
1. Buckeyes beat San Diego State yesterday. It's just another NBD game, but I sure do love football season. <br />
<br />
2. On top of football, men's rugby has started. That means in addition to watching college football, I get to also spend Saturdays outside watching my husband's team play. It's a great way to be out in the sunshine and hang out with friends. <br />
<br />
3. I tried making macarons again yesterday. I've switched from the French method to the Italian method and I'm finally starting to get better results. The bottoms are still slightly sticky but they no longer have an air bubble. Anyone have any luck getting perfect macs?<br />
<br />
4. Have you seen<a href="http://www.urbandictionary.com/define.php?term=literally&defid=903484" target="_blank"> this definition of "literally"</a> on <urban dictionary="">Urban Dictionary? I'm guilty of misusing the word occasionally, but this entry made me laugh. <br />

I went to a family picnic and wanted to bring a small dessert/snack. When I asked my husband what kind of treat he wanted, he eagerly responded with "something with cheesecake!" Which brought me to one of my favorite lunchbox snacks, cheesecake stuffed strawberries. When I toss them in my lunch, they're usually prepared without much ado. But for this gathering, I wanted them to be a bit more presentable and special looking.<br />

These turned out fantastic, and were eaten up almost immediately. I made 4 dozen, but only 3 dozen made it out the door with me. The strawberries were flavorful and juicy and were amazing with the creamy cheesecake middle which was so smooth, rich, and decadent. The white chocolate stands added a nice sweetness and texture as did the graham cracker crumbs on top. <br />

1. Wash berries and let dry completely. Cut of stems, hull the berries, and
slice off just the tip of the berry. Stand the berries on end on a
paper towel to pull some moisture away from the cut surface.<br />

2. Melt chocolate by microwaving for 20 seconds on 50% power, stirring, and
repeating until smooth. Dip just the tips of the berries into the
chocolate and place on a wax paper lined baking sheet. Refrigerate for

<br />3. While chocolate is setting , make the cheesecake filling. In a small
bowl, use a hand mixer to combine the cream cheese, powdered sugar,
milk, extracts, and vanilla bean (if using). Place into a pastry bag fitted with a narrow tip to fill the berries.<br />

4. Put graham cracker crumbs into a small bowl.<br />
<br />
5. Fill strawberries to the top, so that it overfills just a little
bit. Dip the top into the graham cracker crumbs. Repeat.<br />

Refrigerate until serving.<br />

Happy Labor Day weekend everyone! I hope you are enjoying some nice weather and relaxing activities with the long weekend. Here in Cincinnati, we had what I can only describe as a small hurricane come through on Saturday, and then it just rained all day. Good for flowers, bad for cookout in the park.<br />
<br />
<u>On my mind:</u><br />
<br />
1. College football season has officially started! The Buckeyes played
Buffalo and won. I know it's just an out of conference game, but I love watching
college football and there are some high expectations with Urban Meyer this season.<br />
<br />
2. I less love my double oven. Don't get me wrong, I still love having
the double, but I went to bake cookies this week and my normal baking
sheet didn't fit in it - long or short ways. Luckily I had a couple older
pans that were small enough to fit, so
cookie crisis averted. Now I (and my mom) are on a quest to find small but good quality baking pans.<br />
<br />
3. The AC was out at school all week and it was the hottest week of
summer here in Cinci with temperatures in the 90s - it felt like we
were melting. I know that other schools don't have AC, but those schools
are usually equipped with fans and windows that open (ours open out
like an awning so you can't really get a breeze). I was finally fixed by
<span class="aBn" data-term="goog_1426330829" tabindex="0"><span class="aQJ">Friday</span></span> though and I know we're all happy to have it back. #Firstworldproblems, I know.<br />
<br />
4. It's Labor Day weekend! What kinds of fun things did you do? We
watched football, went to a cookout (I brought cheesecake stuffed
strawberries - coming soon), relaxed, and bought a washer and a dryer for the house. I also started a new book, <a href="http://www.amazon.com/Reconstructing-Amelia-Novel-Kimberly-McCreight/dp/006222543X" target="_blank"><i>Reconstructing Amelia</i></a>,
which is about a teenage girl in a NYC prep school who dies, and her mother who's trying to figure out what happened and who her daughter really was.<br />

5. Miley Cyrus on the VMAs. What. Was. She. Thinking? Must've been all that <a href="http://www.urbandictionary.com/define.php?term=molly" target="_blank">Molly</a>. My eyes can never unsee.<br />

it on other occasions, but this time I chunked my own chocolate from a
block I bought at <a href="http://www.cincicakeandcandy.com/" target="_blank"><span id="goog_919525200"></span>Cincinnati Cake and Candy<span id="goog_919525201"></span></a>, used
homemade Tahitian vanilla extract which has a slight cherry-chocolate
aroma, topped them off with a light sprinkling of
espresso brava sea salt, which has a coffee essence.<br />
<br />
3. <a href="http://www.pamperedchef.com/ordering/prod_details.tpc?prodId=26431&catId=4" target="_blank">This </a>pineapple peeler-corer-slicer. I meant to mention it last week
when I talked about how good the fresh pineapple seems to be lately, but
I forgot. It makes slicing a pineapple a cinch - all you do is chop off the top and the bottom then use the slicer like you would if you had an apple slicer. It peels the skin off, cores out the middle, and leaves you with two halves of core-free and skin-free pineapple. <br />
<br />
4. <a href="http://www.thebeardediris.com/" target="_blank">The Bearded Iris</a>. I've followed Leslie's blog for awhile
after I stumbled upon a post about her son's <a href="http://www.thebeardediris.com/2011/08/29/and-thats-why-speech-pathologists-are-bad-mofos/" target="_blank">speech impediments</a> and a<a href="http://www.thebeardediris.com/2011/05/12/dont-try-this-at-home/" target="_blank"> hilarious IEP meeting</a>. Leslie is a humorist and her
blog is hilarious, vulgar, and real. Her posts are a nice break from the
day and I suggest checking it out.<br />
<br />
5. <a href="http://www.ulta.com/ulta/browse/productDetail.jsp?skuId=2160252&productId=xlsImpprod820326&navAction=push&navCount=1&categoryId=cat80032" target="_blank">Benefit High Beam cream</a>. Now part of my make up routine, this
cream has an easy to use, nail polish-like applicator. I apply it to my
cheek bones, dab a bit on the inner corners of my eyes, and use it to
highlight my brow bone. It's kinda pricey for make up (but hey, I'm pretty
frugal) but I can't find a generic I like as much.<br />

To be honest, these cupcakes are good, but I think they could be so much better. The chocolate cake is good, but I prefer either of my chocolate cupcake recipes better (<a href="http://sweetyourheartout.blogspot.com/2013/02/one-bowl-chocolate-cake-with-dreamy.html" target="_blank">here</a> and here). The center is filled with a milk chocolate mousse that is delicious and the whole thing is topped with chocolate frosting and chopped Snickers bars. Although good, I would definitely do it differently next time, namely: different chocolate cake, filled with homemade nougat, topped with salted caramel Italian meringue buttercream, and decorated with chopped peanuts and drizzled chocolate. I will be doing this soon, I don't know when exactly, but that recipe will be posted in the future :)</div>

1. School started this past week, I've officially rejoined the working world
in my third year as a speech-language pathologist. I love my job and
I'm excited to see what the year ahead holds. However, I don't like
waking up before 9, so <span class="aBn" data-term="goog_1716009250" tabindex="0"><span class="aQJ">6:30</span></span>
comes far to early. I'm trying to get a hair/make up routine to 7
minutes, but so far I'm still clocking in at 10 minutes. Last year I
hardly wore make up to school, so this year I'm making more of an effort
to be put together.<br />

2. SYHO is on Pinterest. You can follow me <a href="http://pinterest.com/Ericahabe/boards/" target="_blank">here</a>. You'll see recipes posted from here and from around the internet. You might also catch an occasional speech therapy resource, something house or baby related (no, I don't have kids, nor am I pregz), or humorous images.<br />

3. The Hubbo and I celebrated our 3 year wedding anniversary <span class="aBn" data-term="goog_1716009251" tabindex="0"><span class="aQJ">on Wednesday</span></span>,
and we've been together now for 7 1/2 years. - since I was a college
freshman at Ohio State. For each anniversary, we get each other small
gifts, then go out and do something nice together, like dinner at a
really nice restaurant followed by a night at the ballet. This year, I
got some gourmet, high quality chocolate like Scharffenberger and Lindt from Jungle Jims. Hubbo got some craft beers and a bottle of ginger syrup as a nod to
his summer spent in Poland where beer was commonly splashed with ginger
syrup.<br />
<br />
4. Pineapples seem to finally be in season. All summer long I scope out
the selection of pineapples in the produce department and for the
longest time I could not find any worth spending money on. That finally
changed this week and I think I ate a whole pineapple in 3 days. The
key to selecting a good pineapple is by smelling the fruit where the
stem attaches - it should be sweet and fragrant.<br />

With Fall quickly approaching, I know I will be into lots of smore related things. I've been known to sit by a campfire on a Friday night with friends and say "I want to eat so many smores that I throw up like I've been drinking" (not that you should do either....ya know, drink or smore irresponsibly). But but add strawberries, and suddenly it's healthy, right? Right.<br />

1. My double oven. Now I can cook multiple batches of cookies, make
dinner and a side, etc, all at the same time. And even better, they heat

3. The autobiography <a href="http://www.amazon.com/Wolf-Wall-Street-Jordan-Belfort/dp/0553384775" target="_blank">The Wolf of Wall Street</a> by Jordan Belfort. The
movie version is coming to theaters this November and the cast includes
Leonardo DiCaprio, Matthew McConaughey, and Jonah Hill, to name a few so
you know it's gonna be great<br />
<br />
4. Netflix and Hulu Plus. Since moving into our new house, we cut cable.
Except that I still enjoy watching tv and having it present as
background noise. What do you like better?<br />
<br />
5. <a href="http://www.ulta.com/ulta/browse/productDetail.jsp?skuId=2259542&productId=xlsImpprod5800373&navAction=push&navCount=1&categoryId=cat290004" target="_blank">This </a>sock bun maker. It works so much better than a cut up
sock and it really helps pull off a polished look with minimal time. My
hair is really long and I've had a hard time rolling my hair in the bun.
I solved this problem by only pulling my hair halfway through the donut
(so its looped at the end), splitting the top in two, and rolling down.
I've had to play with exactly how much hair to double, but I can
usually get a good roll on the first or second try.<br />

1 cup of marshmallow fluff<br />
1 cup powdered sugar (doesn't need to be sifted)<br />
2 sticks of butter at room temperature<br />
1/2 teaspoon of vanilla extract<br />

<u>Directions</u><br />
1. Line a baking sheet with parchment paper. Place marshmallows (not fluff) on sheet and toast under the broiler. This will happen quickly so pay attention. A little brown toastiness is okay. Set aside to cool. <br />
<br />
2. In a large bowl, beat the butter with a hand mixer on high until creamed. Decrease the mixer speed, add powdered sugar and beat, increasing speed until the mixture becomes fluffy. <br />
<br />
3. Add toasted marshmallows, fluff, and vanilla extract, and beat until the frosting becomes light and airy. <br />
<br />
4. Top on your cupcakes and enjoy. Or eat it straight out of your piping bag or bowl, I won't judge you. <br />
<br />
**Note: if your toasted mallows are too warm when you add them to your butter/powdered sugar mixture it will be almost impossible to whip up a proper buttercream. Don't worry! Just set the bowl in the fridge for 5-10 minutes to help firm up the butter, take out, and whip as planned. <br />
